Poke (Hawaiian-Style Ceviche)

Serves 6-8

600 grams sashimi-grade albacore tuna loin, cut into 2 cm cubes
4 tbsp. naturally brewed soy sauce
2 tbsp. rice wine vinegar
1.5 tbsp. pure sesame seed oil
1 medium green onion, chopped
2 tbsp. cilantro, finely chopped
1 tbsp. sesame seeds
dash white pepper

Combine all ingredients gently in a suitable mixing bowl until just blended. Refridgerate for 1 hour. This appetizer pairs exceptionally well with Sumac Ridge Stellar’s Jay Brut.
