Texas Tuna Burgers

Serves 4

12 oz.tuna,drained and flaked
2/3 cup non-fat dried milk
12 reduced fat saltine crackers,crushed
1/2 cup onion,finely chopped
1/2 cup canned green chilies,drained
1/4 cup egg substitute, or 1 egg,beaten
cooking spray
2 cups chopped tomatoes
1 tsp. chili powder
1/2 tsp cumin
2 ounces reduced fat Monterey Jack cheese, shredded

  1. Combine tuna,milk powder,cracker crumbs,onion,chilies and egg in medium bowl.Form into 8 patties.
  2. Spray skillet with cooking spray and over medium heat,cook burgers 4 minutes on each side,or until lightly browned.
  3. Combine tomatoes,chili powder and cumin and pour over burgers.Cover pan and reduce heat to medium-low and simmer 5 minutes.Sprinkle with cheese,re-cover and cook a few more minutes,until cheese melts.
